How old is ice cream?

Chilled sweets made by mixing snow or ice with milk, honey or fruit are described in several old traditions, including stories told about Rome and China — though most of those stories are hard to verify. Ice cream in the modern sense, a cream mixture churned as it freezes, is far more recent.

Why does ice cream stay soft enough to scoop?

A home freezer sits at roughly −18°C, well below the freezing point of water, yet ice cream does not set as hard as an ice cube. Sugar lowers the freezing point, and air is beaten into the mixture while it churns, so what comes out of the tub is a partly frozen foam rather than a solid block.
